Tried something a little crazy on Sunday: 11 miles, completely unplugged. No music, just nature and my thoughts, which, honestly, can be a scary place to be. But there’s something so therapeutic about being fully present and connecting with yourself on a deeper level. I usually don’t share run vlogs (mostly because I’m hanging on for dear life), but the beauty of the day and this new perspective felt worth sharing.

It turned into an almost 7 mile progressive run that was unintentional but a welcome surprise with a final mile at race pace.

Sweetened Orchard Pie Quinoa Bowl 🍎🍐

Colder days make these seasonal bowls taste even sweeter. Featuring one of my favorite #MediterraneanDiet ingredients, quinoa, you’ll love how it pairs perfectly with a cozy, pie-like fruit filling. I recommend prepping a few apples and pears for quick bowls all week, and using leftover quinoa to heat up quickly.

Dietitian tip: leave the skin on your fruit to get those added fiber benefits 🙌🏼

Ingredients (1 serving)
    ⁃    1/2 apple, washed and chopped
    ⁃    1/2 pear, washed and chopped
    ⁃    1 tbsp honey (divided)
    ⁃    1 tbsp lemon juice
    ⁃    Pinch of salt
    ⁃    1 cup cooked quinoa
    ⁃    1/3-1/5 cup milk
    ⁃    1 tbsp ground flaxseed
    ⁃    1 tsp chia seeds
    ⁃    Pinch of cinnamon

Instructions:

Add the chopped apple and pear to a small saucepan or skillet with a splash of water.
Cook over medium heat for 5–7 minutes, stirring occasionally, until the fruit begins to soften.

Stir in the 2 tsp honey, lemon juice, and a pinch of salt, then reduce heat to medium-low.

Continue cooking for 3–5 minutes, stirring often, until the fruit is tender and the juices thicken into a pie-like filling.

Add your milk to the cooked quinoa and warm up. Spoon pie filling on top of quinoa add chia seeds, flax or other desired nut/seed combo, sprinkle with cinnamon and remaining honey and serve.

Tip: Once the quinoa is cooked and the fruit is made into pie filling, store them separately for easy meals all week. When ready to eat, combine the quinoa, milk and fruit in a bowl (leave out the nuts and honey), then heat on the stovetop or in the microwave. Finish with your favorite nuts, seeds, a drizzle of honey, and a sprinkle of cinnamon.

✨Feta Veggie Pasta Bake ✨

If you’re craving something cozy, colorful, and nourishing this one’s for you. Perfectly roasted veggies (> 2 per serving), melty feta, and fiber-packed pasta (nearly 30g/serving) come together for a practically heat and eat dinner.

Ingredients
• 2 tbsp extra virgin olive oil, divided
• 1 bunch broccoli (or broccolini)
• 2 cups cherry tomatoes
• 1/2 red onion, thinly sliced
• 1/2 lemon, sliced + juice of remaining
• Pinch of salt + black pepper
• 1/4 tsp red pepper flakes
• 1 tsp oregano
• 8 oz feta cheese block
• 8 oz pasta (I used @carbe_diem_foods for the fiber boost)
• 1/2 cup fresh basil (optional)

Instructions
1. Preheat oven to 400°F and prepare a large casserole dish with 1 tbsp of EVOO.

If you’re craving something cozy, colorful, and nourishing this one’s for you. Perfectly roasted veggies (> 2 per serving), melty feta, and fiber-packed pasta (nearly 30g/serving) come together for a practically heat and eat dinner.

Ingredients
• 2 tbsp extra virgin olive oil, divided
• 1 bunch broccoli (or broccolini)
• 2 cups cherry tomatoes
• 1/2 red onion, thinly sliced
• 1/2 lemon, sliced + juice of remaining
• Pinch of salt + black pepper
• 1/4 tsp red pepper flakes
• 1 tsp oregano
• 8 oz feta cheese block
• 8 oz pasta (I used @carbe_diem_foods for the fiber boost)
• 1/2 cup fresh basil (optional)

Instructions

- 1 pound cherry tomatoes halved
- 1 zucchini chopped (fun addition)

- 2 tsp honey, divided
- ½ tsp Herbs de Provence
- Salt and black pepper to taste
- 15 ounces white beans, drained and rinsed
- 8 ounces halloumi cut into 0.25 inch-thick slices
- ½ lemon, juiced
- Crusty bread

INSTRUCTIONS
- Preheat your broiler to high, placing an oven rack about 3–4 inches below the broiler.

I’ve been getting a lot of questions lately about my weekly workout split and what my movement routine looks like so I’m sharing a peek into what’s working for me right now.

That said… a little disclaimer:
This isn’t a gold-standard program.
And honestly? It’s not even my area of expertise anymore.

But it is something that keeps me feeling energized, grounded, and growing—and if it helps inspire you to find your own version of that, then I’m happy to share.

These days, my cardio includes a mix of running, incline walking, the occasional spin ride, or something fun outdoors like tennis. On strength days, I lean on @onepeloton 20–30 minute quick burners or easy circuits I can knock out in my apartment gym without overthinking.

This isn’t about turning a quesadilla into Greek food (though… tempting). This series is all about applying the Mediterranean framework to the foods you already love. It’s not about strict rules or changing cuisines, it’s about building meals that are more nutrient-dense, satisfying, and aligned with long-term health.

Please excuse the terrible overhead lighting. This quick 30-minute lemon and garlic scallop recipe is a restaurant quality dish for an easy Monday night dinner. Serves 4ish, pair with a mixed green salad or oven-baked asparagus. Details 👇🏼

~ INGREDIENTS ~
- Salt and pepper
- 8 oz pasta
- 2 tbsp olive oil + 1 tsp
- 12 scallops
- 2 tbsp butter
- 2 garlic cloves, peeled
- 1 lemon, zest and juice
- 1/2 cup parmesan cheese, grated
- crushed red pepper flakes

~ INSTRUCTIONS ~
1. Boil salted water, cook pasta al dente, reserve 1 cup pasta water, then drain.

2. Meanwhile, dry and season scallops with salt and pepper; sear in 1 tsp of olive oil 2–3 minutes per side, then set aside.

3. In the same skillet on low, melt butter with olive oil; grate garlic and stir for 1 minute until fragrant. Add lemon zest, and add black pepper.

4. Once pepper is sizzling, add pasta water and pasta; increase heat to medium-high and toss, adding pasta water gradually until sauce thickens (1–2 mins).

5. Remove from heat; stir in Parmesan, lemon juice, salt, pepper, and crushed red pepper. Toss and top with warmed scallops.

During our time in Italy, we leaned in to becoming espresso connoisseurs. With a café on nearly every corner, it became a daily goal to try as many as we could.
